Honey Anise Cookies

Cream together sugar, shortening , honey , vanilla and anise.

Devolve the soda in coffee .

Coffee needs to be very strong. I add an extra 2 teaspoons of instant coffee before the soda.

When you beat the egg white they need to be very stiff peaks

Gently add flour to egg whites then the rest of the mixture can be added.

I add about 1.5  cups flour  - the rest of the ingredients then more flour as needed.

put mixture in fridge for about 2 hours - if wanted this cookie can be sealed in roll able amounts in freezer for a few weeks.

before baking preheat over to 350

When Rolling out the honey anise be careful how many times you need to roll each batch of dough and how much flour is used. this dough gets tough with to much handling.

After cookies are baked and frosted set aside for at lest 2 days if able or put cookies in sealed bag in freezer. The ANISE AND VANILLA gets MUCH MUCH MUCH better with age.

When Danny was in Korea I sent these cookies to him and he was a happy man. the anise was aged well with shipping time and butter frosting held up well.
